{"id":181,"date":"2018-08-25T11:40:17","date_gmt":"2018-08-25T09:40:17","guid":{"rendered":"http:\/\/www.grandgirard.com\/recettes\/?p=181"},"modified":"2020-01-02T12:06:28","modified_gmt":"2020-01-02T11:06:28","slug":"moutarde-benichon","status":"publish","type":"post","link":"http:\/\/www.grandgirard.com\/recettes\/moutarde-benichon\/","title":{"rendered":"Moutarde de B\u00e9nichon"},"content":{"rendered":"<p><em>Ingr\u00e9dients<\/em><\/p>\n<ul>\n<li>4 l d&rsquo;eau<\/li>\n<li>5 dl de raisin\u00e9 \u00abvin cuit\u00bb<\/li>\n<li>500 gr de sucre candi<\/li>\n<li>300 gr de sucre brut<\/li>\n<li>200 gr de farine<\/li>\n<li>50 gr de farine de moutarde<\/li>\n<li>2 dl de vin blanc<\/li>\n<li>1 paquet de cannelle en b\u00e2ton<\/li>\n<li>1 paquet d&rsquo;anis \u00e9toil\u00e9 (12 \u00e9toiles)<\/li>\n<\/ul>\n<hr>\n<p>Faire tremper la farine de moutarde pendant 2 heures dan le vins blanc.<\/p>\n<hr>\n<p>Bouillir dans 4 l d&rsquo;eau les \u00e9pices et le sucre jusqu&rsquo;\u00e0 r\u00e9duction de 2 litres.<\/p>\n<hr>\n<p>Passer le liquide dans un tamis et refaire cuire.<\/p>\n<hr>\n<p>Ajouter la farine tamis\u00e9e d\u00e9lay\u00e9e dans la raisin\u00e9 et porter \u00e0 \u00e9bullition tout en remuant.<\/p>\n<hr>\n<p>Retirer la marmite du feu et ajouter la liaison moutarde et vin blanc.
